I know I asked you about the McDonald's question on Tuesday about restaurants using beef tallow for deep fat frying instead of oil I was optimistic by your answer when you said yes they should.

But I was listening to Dr Wallach yesterday and he said frying with animal fats can cause acrymalide and heterocyclic amines coming from burned fats. This is bugging me. I can live without frying with oils but I dont think I can live without frying without animal fats. Can you help me please?

Oh the heat! Yes! It's all about the smokepoint right? If food is cooked below the smokepoint then it does not have a negative effect. For example, beef tallow has a smoke point of 190°c. Yet some restaurants cook beef tallow at 160°c so it's fine.
